Instructions
  1. Beat the butter and sugar together until pale and fluffy. Then beat in the egg.
  2. Sift the flour, salt and mixed spice into the bowl and bring everything together into a firm ball.
  3. Chill the dough for 30 min so it is easier to handle. Meanwhile heat the oven to 200°C/180°C fan.
  4. Roll out the dough to a 5mm thickness and then cut out desired shapes. Bring together remaining dough and roll out again. Repeat until you have used up all your dough.
  5. Place the shapes on lined baking sheets and bake in the oven for 12-15 min until light brown. Cool on a wire rack.
  6. Meanwhile, sift the icing sugar into a bowl and add the water and stir until you have a thick but spreadable, smooth icing. Divide into bowls and then colour with the food colouring.
  7. Ice the biscuits, leave to set, then eat.
