  1. First, roast the peppers. Either do this by placing them directly on the gas flame of a gas hob or under the grill on high heat until blackened. Then place in a bag, seal and let cool until lukewarm.
  2. Meanwhile, toast the walnuts without oil, in a frying pan on the hob. Be careful they can burn easily!
  3. Peel the now cooled peppers. I find it easiest to use some kitchen paper and rub off the skin but fingers work well also. Then halve and deseed the peppers, reserving the flesh.
  4. Add the garlic clove, bread and toasted nuts into the food processor. Blend until ground. Then add the peppers, lemon zest and juice, pomegranate molasses, large pinch of salt and chilli to taste
  5. Finally, slowly add the olive oil until it is fully incorporated and thick and glossy. Adjust the seasoning and serve at room temperature
