  1. Peel and chop the parsnips into roughly thirds, then boil until very tender. Drain in a colander and then let stream dry for a few minutes.
  2. Mash well until smooth in a large bow, then sieve the flour on top and add the egg and parmesan. Work together with your hands until you have a smooth and pliable dough and season. Divide roughly into 3 and roll each into a thin sausage and cut into 1cm pieces. If you wish, roll over the back of a fork to obtain the typical gnocchi markings.
  3. Heat the oven to 200C/180C fan.
  4. Bring a large saucepan of salted water to the boil then cook the gnocchi until they have risen to the surface. Drain and then add to an oven proof dish.
  5. Combine the cream and the blue cheese in a small saucepan and then allow the cheese to melt into the cream on low heat. Pour onto the gnocchi and top with the parmesan. Bake for around 20-30 min until golden brown on top. Sprinkle with chopped parsley and serve immediately.
